Instructions
Mill the flour – Mill the hard white and soft white wheat berries together on the finest setting until you have freshly milled flour.
Mix the dry ingredients – In a large bowl, whisk together the freshly milled flour, granulated sugar, baking powder, baking soda, and kosher salt until evenly combined.
Mix the wet ingredients – In a separate bowl, whisk together the buttermilk, whole milk, eggs, vanilla extract, and melted butter until smooth.
Combine the batter – Pour the wet ingredients into the dry ingredients and gently stir with a rubber spatula until just combined. The batter should still be slightly lumpy. Avoid overmixing to keep the pancakes tender.
Rest the batter – Let the batter rest for 10–15 minutes. This short rest gives the freshly milled flour time to fully hydrate, helping create lighter, fluffier pancakes with a tender crumb.
