2cupsfresh peachespeeled and diced, about 300 grams
Instructions
Combine the ingredients – Add the organic cane sugar, water, and diced peaches to a medium saucepan, stirring everything together before placing it over medium heat.
Dissolve the sugar – Bring the mixture to a gentle boil over medium heat, stirring occasionally until the sugar has completely dissolved and the peaches begin to soften.
Mash the peaches – Reduce the heat to low and gently mash the peaches with the back of a wooden spoon. This helps release more of their juice and natural peach flavor into the syrup.
Simmer the syrup – Let the syrup simmer gently for about 10 minutes, stirring occasionally, until the peaches are very soft and the syrup is fragrant.
Steep the flavors – Remove the saucepan from the heat, cover, and let the peaches steep for 15 to 20 minutes. This extra steeping time allows the fresh peach flavor to become even richer.
Strain the syrup – Pour the syrup through a fine-mesh strainer into a clean glass jar or bottle. Gently press the peaches with the back of a spoon to extract as much syrup as possible without forcing large pieces of fruit through the strainer. Discard the solids.
Cool and store – Allow the Peach Simple Syrup to cool completely before using or transferring it to the refrigerator for storage.
Notes
Storage – Store Peach Simple Syrup in an airtight glass jar or bottle in the refrigerator for up to 2 weeks. If it develops an off smell or becomes cloudy, discard it. Expert Tip – Choose ripe, fragrant peaches for the best flavor. Gently pressing the peaches while straining helps extract more syrup without making it cloudy. Serving Suggestion – Stir Peach Simple Syrup into Peach Lemonade, Peach Iced Tea, sparkling water, cocktails, mocktails, or iced coffee. It's also delicious drizzled over pancakes, waffles, yogurt, fresh fruit, or vanilla ice cream, and makes a wonderful soak for cake layers or addition to homemade whipped cream. Flavor Variation – Add a sprig of fresh mint, a cinnamon stick, a slice of fresh ginger, or a strip of lemon peel while the syrup simmers for a subtle flavor twist. Remove any aromatics before straining the syrup.
