Instructions
Grate the potatoes using a food processor or a cheese grater. Soak the grated potatoes in cold water for about 10 minutes to make them cook better.
Squeeze out the extra water from the potatoes by putting them in a clean dishcloth and wringing them out.
Preheat the oven to 350 degrees F.
Chop the onion and garlic, then add them to the grated, dried potatoes along with black pepper and salt. Mix everything well.
Heat a 12-inch cast iron pan on medium-high heat with some bacon fat or butter. Lightly cook the potatoes in two batches for 2-3 minutes. This step helps improve the texture of the casserole and makes the onion and garlic taste even better.
Brown 1 pound of sausage in the cast iron skillet and set it aside.
Put the lightly cooked potatoes in a large mixing bowl. Add the rest of the ingredients: sour cream, minced onions, cream of chicken soup, cheese, and the browned sausage. Mix everything together.
