Homemade Sourdough Einkorn Pasta (discard or starter)
Einkorn sourdough pasta! Made with organic Einkorn flour, eggs, water, and a sourdough starter or discard, this pasta is healthy, nutritious and incredibly delicious.
1cupfreshly milled sifted Einkorn Flour or All-Purpose Flour
1large egg at room temperature
1tbspSourdough Starter or Discard
Instructions
Add the flour and make a well in the center on a prepared work surface.
Crack the egg into the center of the well and add the sourdough starter or discard.
Whisk the egg and starter together with a fork or your clean hand until they are combined.
Begin to incorporate the flour into the egg mixture, starting with the inside rim of the well and working your way outward.
Once the dough has come together, turn it onto a lightly floured surface and knead for 5-10 minutes until it is smooth and elastic.
Cover the dough with a damp towel and rest for at least 30 minutes.
Once the dough has rested, divide it into four equal pieces.
Use a rolling pin or pasta machine to roll the dough into your desired shape and thickness, working with one piece at a time.
Repeat with the remaining pieces of dough.
Bring a pot of salted water to a boil and cook the pasta for 2-3 minutes until al dente. Alternatively, dry the pasta on a pasta drying rack or a wire cooling rack and cook at a later date.
Drain the pasta and serve with your favorite sauce.

Notes
Use a kitchen scale to measure the ingredients accurately.
Let the dough rest for at least 30 minutes before rolling it out.
Sprinkle flour on the work surface to prevent the dough from sticking.
Roll the dough out thinly for a tender pasta.
Cut the pasta into your desired shape using a pasta cutter or knife.
Allow the pasta to dry for at least an hour before cooking.
Cook the pasta in a large pot of salted boiling water for 2-3 minutes or until al dente.
Reserve some pasta water before draining, as it can thicken sauces.
Toss the cooked pasta with your favorite sauce and toppings.
