How To Make Homemade Einkorn Sourdough Pasta (discard or starter)

Step 2: Crack the egg into the center of the well and add the sourdough starter or discard.

Step 3: Whisk the egg and starter together with a fork or your clean hand until they are combined.

Step 4: Begin to incorporate the flour into the egg mixture, starting with the inside rim of the well and working your way outward.

Step 5: Once the dough has come together, turn it onto a lightly floured surface and knead for 5-10 minutes until it is smooth and elastic.

Step 6: Cover the dough with a damp towel and rest for at least 30 minutes.

Step 7: Once the dough has rested, divide it into four equal pieces.

Step 8: Use a rolling pin or pasta machine to roll the dough into your desired shape and thickness, working with one piece at a time.

Step 9: Repeat with the remaining pieces of dough.

      Bobbie, yes, we use einkorn berries and grind them up. This recipe is for whole grain einkorn. I hope that helps answer your question. We love using einkorn wheat berries in our recipes. The cookies are so buttery with this grain. Have a blessed day!!

      1 egg = 3 tablespoons aquafaba

      1 egg = 1 tablespoon of ground flax seeds + 3 tablespoons of water

      1 egg= ¼ cup apple purée

      1 egg= ÂĽ cup yogurt

      1 egg 3 tbsp. Just Egg
