Sourdough Tortillas made with either discard or starter are the perfect addition to your weeknight meals. These tortillas have a unique and tangy flavor that pairs beautifully with any dish, and with the added benefits of sourdough, you'll be getting an extra boost of gut-healthy probiotics. Our easy-to-follow recipe will guide you through the process of making these delicious tortillas from scratch.
Ingredients
- 1/2 cup of Sourdough Starter or Discard
- 2 tsp of Salt
- 1/2 cup of Water
- 1/3 cup of Olive Oil
- 3 cups of Unbleached All-purpose flour
Instructions
- In a large mixing bowl or stand mixer, combine the sourdough starter or discard salt, water, and olive oil.
- Gradually add in the flour, stirring until a shaggy dough forms. Let the dough rest for 30 minutes.
- After 30 minutes, use a stand mixer to knead the dough for 2-3 minutes. Alternatively, you can knead the dough by hand on a clean surface for about 10 minutes until it becomes smooth and elastic.
- Once you have a smooth dough, remove it from the bowl and divide it into 8 sections.
- Roll each section into a ball.
- Use a tortilla press or a rolling pin to make the balls flat. You can place parchment paper on top and bottom to prevent them from tearing as you transfer them to a hot pan to cook.
- Place parchment paper on top and bottom and press. Remove one side and place this side down on a hot pan. Remove parchment paper from the top as it cooks and release it from the tortilla. - Cook each pressed flour tortilla on medium-high heat in a preheated, piping-hot cast iron crepe pan or flat pan on the stovetop. Use tongs to flip them over, and they will puff up and have brown spots on both sides when done. Cook time is about 2-3 minutes per side.
