How to Cook Delicata Squash | Easy Oven Roasted

Here’s how to cook delicata squash the way I like it best for fall, sliced into rings and roasted until golden on the outside and tender in the center. It’s one of the simplest winter squash to bring home from the market, and it goes from whole squash to a pan of roasted rings in well under an hour.

There’s no peeling and no wrestling with a hard rind. Delicata skin is thin enough to eat once it’s roasted. You trim the ends, slice it into rings, and pop out the seeds with a biscuit cutter.

I toss the rings with butter or olive oil, salt, pepper, and a pinch of cinnamon, then finish them with an optional drizzle of maple syrup once they come out of the oven. They’re lovely as a side dish, and they’re exactly what I use to top this Apple Harvest Salad.

Why You’ll Love This Recipe

  • No peeling – The thin skin softens in the oven and is completely edible, so prep is only trimming, slicing, and removing the seeds.
  • Golden edges, tender centers – Thick, even rings and a hot oven give you browned, crisp-edged outsides with soft, sweet squash inside.
  • Side dish or salad topper – Serve the rings warm as a fall side, or drizzle them with maple syrup and pile them onto a harvest salad.

Ingredients You’ll Need

  • Delicata squash – Look for squash that feels heavy for its size, with cream-colored skin, green stripes, and a dry, firm stem. Skip any with wrinkles or soft spots, since that usually means the squash has started to dry out.
  • Olive oil or melted butter – Tossing the rings in fat helps the cut sides brown and keeps the skin from drying out. Butter gives a richer flavor, while olive oil keeps them a little more savory.
  • Maple syrup – It’s optional and goes on after roasting, not before. A light drizzle over the warm rings adds just enough sweetness, which is especially nice when they’re headed for a harvest salad.
  • A full ingredient list with exact amounts can be found in the recipe card below.

Variations & Add-Ins

  • Sweet and savory sprinkle – Toss the rings with about 1 teaspoon of cinnamon sugar before roasting, or swap the plain salt for chipotle salt. For a little of both, try cinnamon sugar with a light pinch of chipotle salt.
  • Pumpkin pie spice – Swap the pinch of cinnamon for the same amount of homemade pumpkin pie spice for a warmer, more autumn-spiced flavor.
  • Parmesan finish – Skip the maple syrup and cinnamon, then sprinkle about ¼ cup of finely grated Parmesan over the rings as soon as they come out of the oven so it melts onto the warm squash.

Recipe Tips

Scrub the skin well – Since you’ll eat the skin, give each squash a good wash and dry before slicing. A dry squash also takes the oil or butter more evenly.

Cut the rings evenly – Slice the squash into ½-inch rings, or up to ¾ inch if you prefer them a little thicker. Keep the rings as even as possible so they roast evenly. I especially loved how some of the thinner pieces turned slightly crispy for my Harvest Autumn Salad.

Give the rings room – Spread them in a single layer with a little space between them. Crowded rings tend to steam instead of browning.

Watch closely after flipping – Roast the rings for 15 minutes, then flip and continue roasting for another 5–10 minutes. Keep a close eye on them during the last few minutes so they don’t overcook.

Save the maple for the end – Maple syrup can darken quickly at high heat, so drizzle it over the rings once they’re out of the oven.

How To Make Roasted Delicata Squash Rings

  1. Preheat the oven – Heat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and trim the squash – Wash and dry the squash, then cut off both ends. There’s no need to peel it.
  3. Slice into rings – Slice each squash crosswise into ½-inch-thick rings. You can cut them up to ¾ inch thick, depending on your preference. Keep the slices as even as possible.
  4. Remove the seeds – Press a biscuit cutter or round cookie cutter into the center of each ring to remove the seeds and stringy membrane, or scrape them out with a spoon. I used a 1¾-inch biscuit cutter for the two medium squash I roasted.
  5. Season the rings – Toss the rings with the olive oil or melted butter, salt, pepper, and cinnamon until evenly coated. Spread them in a single layer on the baking sheet, leaving a little space between each ring.
  6. Roast and flip – Roast at 425°F for 15 minutes. Flip each ring and roast for another 5–10 minutes, watching closely to prevent overcooking. The squash is ready when the edges are golden and slightly crispy and the centers are tender when pierced with a fork.
  7. Finish with maple – Drizzle the warm rings with maple syrup, if using. Serve warm as a side dish or arrange them over the Apple Harvest Salad.

Storage Suggestions

  • Room temperature – Let leftover rings cool, then refrigerate them within 2 hours of roasting.
  • Refrigerator – Store cooled rings in an airtight container for 3 to 4 days.
  • To reheat – Spread the rings on a baking sheet and warm them at 400°F (200°C) until heated through. The oven helps the edges crisp back up better than the microwave.
  • Freezer – Freeze cooled roasted rings in a freezer-safe airtight container for up to 3 months. Thaw overnight in the refrigerator, then reheat in the oven. Expect a softer texture after freezing, which works well for mashing or stirring into soup.

What to Serve With Roasted Delicata Squash

  • Top a harvest salad – Drizzle the warm rings with maple syrup and arrange them over greens for this festive fall Apple Harvest Salad. The golden rings make the salad look as good as it tastes.
  • Set them on the Thanksgiving table – A platter of roasted rings brings color to the holiday spread. Their sweetness pairs well with the tart brightness of cranberry orange sauce.
  • Add a basket of warm rolls – For a cozy fall dinner, serve the rings alongside roast chicken or pork chops and soft dinner rolls made with freshly milled flour.

FAQs

No, and that’s one of the best things about it. Delicata skin is thin and turns tender in the oven, so you can eat it right along with the squash. Give it a good scrub before slicing and leave the skin on.

For ½-inch-thick rings, roast at 425°F for 15 minutes, then flip and roast for another 5–10 minutes, or until the edges are golden and slightly crispy and the centers are tender when pierced with a fork. Keep a close eye on them after flipping to prevent overcooking. Thicker rings may need a little more time.

Yes, just like pumpkin seeds, delicata seeds can be rinsed, dried, and roasted into a crunchy snack. One squash gives you only a small handful, so they’re more of a bonus than a batch. Roast them the same way as these roasted pumpkin seeds.

A ripe delicata has a cream to pale yellow background with green stripes, feels heavy for its size, and has a dry, firm stem. A squash that’s mostly green may have been picked early. Skip any with wrinkled skin or soft spots, since those are past their best.

Yes, let the rings cool completely, then freeze them in a freezer-safe airtight container for up to 3 months. Thaw them overnight in the refrigerator and reheat in the oven. They’ll be softer than fresh-roasted rings, so frozen squash works best mashed or stirred into soup.

Storage – Refrigerate cooled rings within 2 hours of roasting and store them in an airtight container for 3–4 days.
Freezing – Freeze cooled rings in a freezer-safe airtight container for up to 3 months. Thaw overnight in the refrigerator. They’ll be softer after freezing, which works well for mashing or soup.
