Recipe Tips

Let the batter rest – Rest the batter for 10 minutes before baking so the freshly milled flour can fully hydrate. This creates a softer crumb and improves the overall texture.

Make Ahead – Bake the brownies a day in advance and store them in an airtight container. Resting overnight allows the chocolate flavor to deepen, making them even better the next day.

Try not to overbake – Begin checking the brownies around 28-30 minutes. They’re ready when a toothpick inserted near the center comes out with a few moist crumbs attached. The brownies will continue to set as they cool.

How to Make Cakey Brownies with Freshly Milled Flour

  1. Mill the flour – Mill the hard white and soft white wheat berries into a fine flour. Whisk the flours together until evenly combined to create the Fresh Milled All-Purpose Flour Blend.
  2. Preheat the oven – Preheat the oven to 350°F (176°C). Grease a 9×9-inch baking pan or, for thicker brownies, an 8×8 pan, line it with parchment paper, then lightly grease the parchment. Dust the parchment with a light coating of Dutch-process cocoa powder, tapping out any excess to help prevent sticking and create clean edges.
  3. Combine the butter and sugar – In a large mixing bowl, stir together the melted butter and granulated sugar until well combined.
  4. Add the cocoa and flavorings – Stir in the Dutch-process cocoa powder, salt, baking powder, vanilla extract, and espresso powder until fully incorporated.
  5. Mix in the eggs – Beat in the eggs one at a time, mixing well after each addition. Scrape down the sides and bottom of the bowl as needed.
  6. Add the flour – Stir in the Fresh Milled All-Purpose Flour Blend just until no dry flour remains and the batter is smooth. Avoid overmixing to maintain a tender crumb.
  7. Rest the batter – Let the batter rest for 10 minutes. This gives the freshly milled flour time to fully hydrate for the best texture.
  8. Fill the pan – Spread the batter evenly into the prepared baking pan, smoothing the top.
  9. Bake the brownies – Bake for 28–35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs attached. Avoid overbaking, as the brownies will continue to set while cooling.
  10. Cool completely – Allow the brownies to cool completely in the pan before lifting them out using the parchment paper.
  11. Slice and serve – Cut into squares using a sharp knife, wiping the blade clean between cuts for neat slices.

FAQ

Cakey brownies have a lighter, more tender crumb because they use more eggs and a small amount of baking powder for lift. This recipe is designed to create a soft, cake-like texture while still delivering plenty of rich chocolate flavor.

Yes! Freshly milled flour works beautifully in brownies when you use the right wheat blend. Combining hard white and soft white wheat creates brownies that are soft, tender, and flavorful without becoming heavy. Letting the batter rest for 10 minutes before baking also gives the flour time to fully hydrate for the best texture.

A blend of hard white and soft white wheat produces the best results. Hard white wheat provides enough structure for clean slices, while soft white wheat keeps the brownies light and tender. Together, they create a versatile flour blend that’s perfect for cakes, brownies, and other delicate baked goods.

Yes, but glass pans heat differently than metal. For the best results, reduce the oven temperature by 25°F and expect the brownies to need a few extra minutes to bake.

Dry brownies are usually the result of overbaking or adding too much flour. Begin checking for doneness around the 28-minute mark and remove the brownies when a toothpick inserted near the center comes out with a few moist crumbs attached. Measuring your freshly milled flour accurately and mixing just until combined will also help keep the brownies soft and tender.

  1. 4 stars
These brownies are to die for – very moist, very fudgy, and easy to make. I love that there was no mixer required. I threw these together late last evening, and they came together quickly and without any real fuss. They did take longer than listed to bake. I halved the recipe (not easy with 5 eggs – hahaha) because I thought the 9 by 13 would be too many for us – I should have just done the 9 by 13 because these are flying off my counter.
4 stars not 5 because the brownies are thinner than I expected. I am not sure if it would have changed if I used the full recipe and a 9 by 13. Definitely give them a try and see if you can keep from licking the bowl! I know I couldn’t.

    1. Thank you Barbara so much for such a wonderful review. I love a one bowl recipe as well and when it’s bowl licking good recipe thats always a good thing! Your comment make me laugh and smile!!!

I am sorry I had a typo about the pan size. It is suppose to be a 9×9 pan. I have fixed that typo in the post and in the recipe card as well. Thank you for catching that. I hope you give these another try and come back and give them another review. If you half the recipe next time try a smaller pan lets say a 8×8 or even smaller for a taller rise. I really appreciate your feedback and the time you took to let us know how these brownies turned out.

With love and gratitude from the cottage,
      Emily
