These Red, White & Blue Brownie Kabobs are one of my favorite ways to give my Cakey Brownies with Freshly Milled Flour a patriotic twist for Memorial Day, the Fourth of July, Labor Day, and all those summer gatherings where everyone is reaching for an easy handheld dessert.

I love finding new ways to build on recipes we already enjoy, and this is one I come back to every summer. The brownies are sturdy enough to thread onto skewers without falling apart, while the fresh berries add just the right amount of sweetness and a pop of color. It’s a simple way to dress up a homemade dessert without spending hours in the kitchen.

Use completely cooled brownies – Warm brownies are softer and more likely to crumble when cut into cubes or threaded onto skewers. Let them cool completely before assembling the kabobs for the cleanest results.
Cut even-sized brownie cubes – Keeping the brownie pieces close in size helps the kabobs look polished and makes them easier to assemble. It also ensures each skewer has a balanced mix of brownies, fruit, and marshmallows.
Choose firm, fresh fruit – Firm strawberries and plump blueberries hold up best on skewers. Softer or overripe fruit can tear easily and won’t stay fresh as long on a dessert tray.
Assemble the day you plan to serve – You can bake the brownies a day ahead, but assembling the kabobs the day of your gathering keeps the fruit fresh and the marshmallows soft.
Serve chilled on warm days – If you’re hosting an outdoor cookout or picnic, keep the brownie kabobs refrigerated until just before serving. The fresh fruit stays crisp, and the brownies maintain their best texture.


Instructions
- Prepare the brownies – Bake and cool the Fresh Milled Flour Cakey Brownies completely. Cut the brownies into 24 bite-sized cubes, about 1 inch each.
- Wash and dry the fruit – Wash the strawberries and blueberries, then dry them thoroughly. Removing as much moisture as possible helps the kabobs stay fresh and keeps the brownies from becoming damp.
- Prepare the strawberries – Remove the strawberry stems and slice each berry in half lengthwise. On one half, trim a small slice from the rounded side to create a flatter edge so it nestles neatly against the marshmallow.
- Begin assembling the kabobs – Thread 1 brownie cube, 1 strawberry half with the point facing outward, 1 blueberry, 1 marshmallow, and 1 strawberry half onto each skewer.
- Finish the pattern – Add 1 brownie cube, 1 blueberry, 1 marshmallow, 1 strawberry half, and 1 blueberry to complete each kabob.
- Repeat the assembly – Continue threading the ingredients in the same order until you have 12 patriotic brownie kabobs.
- Chill and serve – Arrange the finished kabobs on a serving platter and refrigerate until ready to serve.

Freezing and Storage
- Store – Keep leftover brownie kabobs in an airtight container in the refrigerator for up to 2 days. The brownies will stay soft, though the fruit is at its freshest within the first day.
- Make Ahead – Bake the brownies up to 2 days in advance and store them in an airtight container. Assemble the kabobs the day you plan to serve them for the best texture and presentation.
- Freeze – I don’t recommend freezing the assembled kabobs since the fresh fruit and marshmallows don’t thaw well. If you’d like to get ahead, freeze the brownies by themselves, then thaw and assemble the kabobs with fresh fruit before serving.
